BBQ Pulled Pork-Stuffed Peppers

A couple of weeks ago, I cooked a pork butt in the crock pot for our weekday lunches, but we still had some left over that Saturday.  For a fun lunch, I made pulled pork-stuffed sweet peppers!


After cutting the peppers in half and scraping out the seeds, I steamed them in the microwave in a covered dish with a bit of water until they were slightly softened.  In the meantime, I mixed together some pulled pork (chopped up even smaller), chopped kale (because health), an egg to bind, and a little BBQ sauce and shredded cheese.  After stuffing the pepper halves with the mixture, I put them on a baking sheet with the Pyramid Pan to hopefully promote even cooking and keep the peppers upright...


... and topped them with a little more cheese.  I baked them in a 400° oven for 10-15 minutes until the cheese was melty and starting to brown.


I served them with some BBQ sauce, and they were a great way to use up the pulled pork!  These would be great for an event as they were easy to pick up and eat, and were relatively healthy (omit the cheese if you're being even more health-conscious.
