Eggs in a Nest

We've recently added potatoes back into our diet, and now my favorite weekend breakfast is something I call "eggs in a nest" - I'd be shocked if someone hadn't already called it that, though.


I julienned some sweet potatoes and cooked them in a skillet with oil, some diced onion, salt, pepper, cumin, and cinnamon.  Then once they're getting close to done, I make little wells and crack open an egg into each well.  I pierce the yolks and swirl them around a bit because we're not big on runny eggs in this family.


These are to die for!!  What are your favorite things to make for breakfast when you're not pressed for time?
